Souper Simple Lentil Soup

I’m gonna break this down in less than 100 words and let the pictures do the talking.

Get a medium onion, two stalks of celery and one or two large carrots (aka the holy trinity) chopped up and sauteeing in some olive oil.








Add a can of tomatoes or 1/2 cup of tomato sauce and a diced tomato. Saute for 8 minutes.








Add 9 cups of broth – vegetable, chicken or beef – whatever you’ve got. Add 1 1/2 cup lentils. Cover. Bring to a boil. Reduce to simmer. Cook on simmer for 30-40 minutes or until lentils are tender.











Throw some parmesan cheese on it. Done.
